Salmon, potatoes and tenderstem broccoli

Overview: A light and delicious combination of crispy skin salmon with ginger, soy and garlic, paprika fried potatoes and a chilli and garlic tenderstem broccoli side.
Nutrition highlights: High dose of vitamin A, D, B12, B6 and C, calcium, iron, potassium and folic acid. Also high in Omega-3 fatty acids and protein. Approx. 500 Calories per serving.
Ingredients: 2 Salmon fillets, 3 potatoes, 1 pack of tenderstem broccoli, 3 cloves garlic, 2 tbsp ginger paste (or grated ginger), 2 chillis, 2 tbsp soy sauce, oil, 1 tbsp paprika
Method: Bring a pan of water to the boil. In the meantime peel and chop your potatoes into 1 inch chunks, crush the three garlic cloves, and finely chop the 2 chillis.
Turn your grill on to medium and prepare a oven/grill dish in which to put the salmon fillets.
Once your water is boiling throw your chopped potatoes into the pan with a pinch of salt. Boil for 10 minutes. Whilst the potatoes are boiling combine the ginger, one clove of garlic and soy sauce into a paste, now massage this into the salmon, and make sure you paste a good layer onto the salmon skin.
Heat a good amount of oil in a frying pan, once fairly hot, add the salmon fillets skin side down and fry for two minutes. After two minutes, transfer the salmon fillets into the grill plate and put under the grill skin side down for six minutes.
Boil another pan of water. Once your potatoes are done, drain and put to one side. Add oil to the pan, and once hot, add paprika and chopped chilli and a pinch of salt and fry for a minute. Add the potatoes to the pan and keep tossing until the potatoes are covered with mixture. Fry for another 3 minutes until crispy and put to one side
Add tenderstem broccoli to the pan of boiling water and boil for four minutes. Turn the salmon fillets over and grill for another six minutes. Once the broccoli is cooked, drain and put to once side. Add oil, and remainder of crushed garlic and chilli to the pan, fry for two minutes. Toss in the broccoli and cook for two more minutes.
The salmon should be done by now, you're ready to plate up! Serve the broccoli and potatoes to one side and centre the salmon, drizzle over any remaining juices from the grill and you're good to go. Enjoy!
