Sweet potato curry


Overview: A sweet and spicy earthy curry. This will warm you up on a cold winter's day.

Ingredients: Sweet potato (4 or 5), 2 cloves of garlic, 1cm of ginger, 1 onion, 1 chilli, 4-5 tomatoes, 1tsp cumin powder, 1tsp coriander powder, 1/2 tsp turmeric, 1 handful of coriander

Nutritional Information: High in protein, Vitamin C and other minerals.

Method: Wash and skin the potatoes (you can also keep the skin on if you like the texture). Cut them into 2cm cubes. Roughly dice the garlic, ginger, onion and chilli and pop into a food processor or hand blender and blend. Chop up the tomatoes into 1-2cm pieces as well.

Heat a little oil in a pan on a medium to low heat and when hot, add the blended mixture. After it has fried for a few minutes and you can get the aromas, drop in the sweet potato and then the spices. After a few minutes, add the tomato, mix together and put the lid on the pan. Let this sit for five minutes. Now get a cup of water and add to the mixture, bring to the boil quickly then let it simmer with the lid on for 15-20 minutes to let the flavours diffuse and sweet potato turn soft.

Finally chop up the coriander roughly, once the curry has finished its time, serve on a bed of rice. Sprinkle the coriander over the curry.
