Crunchy spinach and onion


Overview: This is more of a simple side dish, but lovely nonetheless.

Ingredients: 200g baby spinach, handful of split urad dal, one onion, one red chilli, two cloves of garlic, pinch of salt.

Nutritional information: High in protein, vitamin A and K

Method: Dice the garlic and chop up the chillies finely (or a bit thicker if you like it like that). Cut the onion into long thin strips.

Fry the garlic and chillies, then throw in the urad dal and fry for a few minutes. Now put the onions in and mix all together and let the onions go slightly brown. Hopefully by now the urad dal should have slightly softened but still retained their crunchy texture.
