Kedgeree!!


Overview: A proper Anglo-Indian dish, I enjoyed this treat while at home at my mum's, and she has kindly contributed to this recipe - a lovely smoked haddock, egg and spice concoction.

Nutrition highlights: approx. 400 calories per serving. High in protein, vitamin A, K, C, sodium, selenium.

Ingredients: 2 fillets smoked haddock, 5x eggs, 3 cups cooked rice, one cup fresh peas, handful of chopped coriander, 1tsp black peppercorns, 1 tbsp cumin seeds, one dried red chilli, one shallot, one garlic glove

Method: First thing, boil a pan of water for the eggs. Add the eggs and boil for 10 minutes. Once your eggs are done boiling, peel and slice into halves, lengthwise and put to one side.

Add the chilli, peppercorns and cumin seeds to a mixer and grind into a fine mixture.

Chop the shallots up into 1cm chunks. Add this to the frying pan and fry for two minutes. Add the spice mixture from the mixer and fry for another two minutes. Add the peas and smoked haddock and cook for three to four minutes. Finally add in the rice and give it a good stir, close the lid and allow to cook on a low heat for five minutes.

There should be enough salt in the dish from the smoked haddock, but if you feel like you need to add some, do so now. Once the rice has finished cooking with the veg and fish, lay your eggs around the top. Chop your coriander up and sprinkle over the top.

Lovely, all done and ready to serve out!
